什么叫慕斯蛋糕
慕斯是英文mousse的譯音,它是一種以奶油,明膠,蛋黃,糖為基本原料的奶凍式的甜點(diǎn)。實(shí)際上,慕斯中不含面粉,并算不上是蛋糕。但我們通常會(huì)在慕斯層中間和底部加墊蛋糕,成為慕斯蛋糕。這樣做可以消除單純慕斯層的油膩感,給食客帶來(lái)多層次的味覺(jué)體驗(yàn)。
慕斯的口感到底怎么來(lái)的?
在口感上來(lái)說(shuō)慕斯是介于冰淇淋與果凍之間的一道奶凍式甜點(diǎn)。但它不像冰淇淋入口迅速融化,而是溫柔地慢慢地融化。它又比果凍的Q彈柔軟多了一種輕盈的氣泡感。關(guān)于慕斯確實(shí)沒(méi)有一個(gè)非常明確的定義。在打發(fā)至輕盈狀態(tài)的淡奶油或者蛋白霜中加入凝固劑混合均勻,產(chǎn)生濃稠凍狀的效果且具有輕柔、入口即化氣泡感就是慕斯的基本做法。
慕斯的原料?
制作慕斯的原料主要有牛奶、鮮奶油、糖、吉利丁片、蛋黃、水果泥等。
做慕斯為什么要加淡奶油?
做慕斯蛋糕時(shí),淡奶油要打到6成左右。在慕斯制作工藝中,打發(fā)的淡奶油起的是增稠的作用。還有起到使慕斯有彈性和體積膨大的作用。如淡奶油沒(méi)有打發(fā)直接加入的話,那么同樣是水相的淡奶油不足以在其中起到增稠填充的作用。一般情況下,如果淡奶油沒(méi)有打發(fā)而導(dǎo)致慕斯?jié){太稀的話,是沒(méi)有辦法補(bǔ)救的。只有重新配料制作。如果淡奶油打的太硬也不行,會(huì)裹入過(guò)多的空氣而導(dǎo)致慕斯的口感不夠細(xì)膩不夠爽滑,會(huì)有空洞感,這樣也影響品質(zhì)。不過(guò),這個(gè)可以隔著溫水,使?jié){料中奶油因?yàn)榧訜嵋夯ㄖ匦伦兂伤?,就不能持氣了),再通過(guò)輕輕的攪拌,使慕斯?jié){恢復(fù)到所需要的稠度。
做慕斯常用原料?
牛奶 :
牛奶是形成慕斯體內(nèi)最基本所需要的水分,用牛奶目的是提升口感和品質(zhì)。如果用普通的水來(lái)代替牛奶,雖然可以制作但在風(fēng)味,口感上遠(yuǎn)不如牛奶。特別是凍過(guò)后內(nèi)部會(huì)存在很大的冰結(jié)晶(冰渣)。
淡奶油:
加入鮮奶油可以增加慕斯的天然奶香味,另一方面還可以使慕斯的口感更為細(xì)膩。通常,我們選用動(dòng)物性鮮奶油,這是因?yàn)閯?dòng)物性鮮奶油乳脂防含量高,而植脂奶油味道稍遜,沒(méi)有濃郁的奶香。
吉利丁:
吉利丁是慕斯制作中最不可缺少的基本材料。
糖:
糖分在慕斯體中,可促成體制更為細(xì)膩而柔軟,更富有布丁狀的良好彈性。糖的吸濕性強(qiáng),有助于慕斯體內(nèi)發(fā)的水分不會(huì)很快的流失掉。
蛋黃 :
有些制作慕斯的配方是不添加蛋黃的,也有些配方是蛋白和蛋黃一起添加的。但我們認(rèn)為,還是只添加蛋黃的慕斯口感最好。
這是因?yàn)榈包S具有較好的凝結(jié)力和乳化作用,促成慕斯體的體質(zhì)穩(wěn)定并且調(diào)節(jié)動(dòng)物膠脂過(guò)于彈性。也就是說(shuō)蛋黃在慕斯的制作中起到了獨(dú)有的獨(dú)特的中和作用,這個(gè)中和作用來(lái)自于蛋黃中的一個(gè)成分:卵**脂。
水果泥 :
水果泥的添加給慕斯蛋糕帶來(lái)不同的清爽口味。在慕斯制作過(guò)程中,如果添加酸性比較大的水果泥,(比如芒果泥)建議把水果泥加熱。減少其酸性。
酒 :
慕斯的制作過(guò)程中,建議加少許(10毫升左右即可)酒,比如朗姆酒、白蘭地等。這樣一來(lái)可以給蛋黃殺菌,而來(lái)增加慕斯的風(fēng)味。當(dāng)然,如果您是做給小孩子吃,那就不用添加了。

六寸模具底部放一張油紙,然后把黃油倒入奧利奧餅干碎里面攪拌均勻倒入模具里面用勺子壓平,放入冰箱冷藏半個(gè)小時(shí)備用

鍋里加水燒熱關(guān)火(燒熱即可不需燒開(kāi),微熱的狀態(tài)下就可以融化綿白糖和吉利丁片的)放入牛奶盆,加入20克綿白糖攪拌均勻

吉利丁片剪成小塊用涼開(kāi)水或冰水泡軟即可(夏天用冰水)

可可粉分三次過(guò)篩篩入牛奶里,每次加入都要攪拌至無(wú)顆粒(可可粉比較難融化,分次加入會(huì)好一些)攪拌均勻后加入泡軟的吉利丁片攪拌均勻融化即可,然后放在室溫下冷卻,冷卻就可以了,不需要凝固
淡奶油加入20克綿白糖打發(fā)至紋路清晰,但是還要是流動(dòng)狀態(tài)(這里奶油不要打發(fā)過(guò)了)⬆️⬆️(PS:夏天淡奶油不太好打發(fā),可以坐冰水盆里面會(huì)好打發(fā)一些。)

分兩次把可可糊倒入打好的淡奶油里,每次都要翻拌均勻(記住是翻拌不是攪拌哦)

從冰箱取出模具,把翻拌均勻的慕斯倒入模具里面,放入冰箱冷藏四個(gè)小時(shí)以上(冷藏就好,冷凍會(huì)變硬哦)最好是隔夜

取出冷藏好的慕斯用吹風(fēng)機(jī)對(duì)著模具旁邊吹一圈,或是用熱毛巾敷一下就可以輕松脫模了(記住不要吹太久或是敷太久,不然容易影響外觀)脫??梢杂檬謴幕顒?dòng)底盤托起或是拿個(gè)比模具小的碗放在底部輕輕往下壓就可以了

最后再篩一層可可粉就完成啦,也可以拿水果什么的裝飾一下
