雖然迄今還沒去過德國,但混跡于武漢各大五星酒店自助餐廳的壹周君,時(shí)不時(shí)會(huì)被五花八門“XX美食節(jié)”所洗禮,也因此,耳聞目染口嘗的吃過不下30多種德國香腸啦
說實(shí)話,比起那些吃過數(shù)百種德國香腸的美食老饕,壹周君還是自愧不如,據(jù)說德國幾乎每個(gè)小鎮(zhèn)都有自己專屬的的香腸,千城千味。而能夠?qū)⑦@些香腸的區(qū)別說出個(gè)道道來,確實(shí)超級(jí)有難度。
德國以“香腸王國”而聞名美食界,德國香腸有紅腸,白腸之分,紅腸更為普遍。有人統(tǒng)計(jì)過,全德國有超過1500種香腸,絕大部分香腸都用自己地區(qū)或是城市來命名。原料從豬肉、牛肉、動(dòng)物內(nèi)臟甚至蔬菜都有,大家的吃法也是各式各樣,切片、水煮、油煎、燒烤......應(yīng)有盡有。
至于你問德國香腸與我們中國的香腸有什么區(qū)別?最簡單的一句話就是——德國香腸屬于熏煮香腸,沒有經(jīng)過風(fēng)干這道工序。
至于壹周君吃過的德國香腸,印象深刻的也就寥寥幾款,一個(gè)是紐倫堡香腸,只有拇指大小,可以一口一個(gè)還有慕尼黑白腸,巴伐利亞的代表性美食,直接是咬開外皮蘸甜芥末吃的,還有一個(gè)是咖喱香腸,就是將煎好切成小塊,澆上番茄醬和咖喱粉,搭配薯?xiàng)l和面包來吃的,在柏林,還有個(gè)介紹咖喱香腸的歷史博物館!

首先是油煎香腸(Bratwurst),這是德國最常見的煎烤香腸,其實(shí)也就是我們?cè)谏虉龀兄谐缘哪欠N烤腸啦,不過國內(nèi)的淀粉加的多,口感還是差點(diǎn)。
其名字來源取自古老的德文“Br?t”,在德國,因調(diào)料和肉類的差別,油煎香腸有超過50種類別。
下面就是壹周君剛才說的紐倫堡香腸(Nürnberger Rostbratwürstchen)和咖喱香腸(Currywurst)啦,其中咖喱香腸是德國最受歡迎的小吃。
德國血腸(Blutwurst),是用豬血、豬肥肉和豬皮制成的,和我們東北血腸差別還是挺大的。一般配蘋果醬和土豆泥來吃,可以冷食,也可以腸煎一下,壹周君吃過,其實(shí)味道一般。
德國肝腸(Leberwurst),不是“肝腸寸斷”,口感軟軟,大多用來夾面包。豬肝、牛肝、鵝肝甚至各種野生動(dòng)物肝,都有可能出現(xiàn)。
最后是茶腸(Teewurst),也叫“德國下午茶香腸”,口感是略帶酸味,粘稠狀的可以涂抹在面包上食用。
